I love salmon.  Everything about it is SUPER yummy and super healthy and good for you.  The only problem is that I get bored of salmon with a squirt of lemon.
I was SO pleased when I stumbled across this recipe.
I adapted it a little by adding pistachio nuts- AMAZING addition

| In a food processor mix pistachio nuts, panko crumbs, salt & pepper. Melt coconut oil and add to the mixture |

| Then coat the salmon with Dijon mustard (skin facing down) | 
|  | 
| Finally pat the mixture onto the Dijon mustard and cook for about 20 mins | 
Enjoy! I know we certainly did.  We added a side salad of spinach, strawberry, red onion & balsamic
